What each ingredient does

Beef
Provides the meaty body and savoury bulk of the filling once boiled and chopped.
Suet
Adds fat that keeps the filling moist and rich as it firms up.
Apples
Contribute moisture, tartness and body to the filling.
Raisins
Add concentrated sweetness and a chewy texture.
Sugar
Adds sweetness and helps preserve the mixture.
Boiled cider
Adds concentrated apple flavour, sweetness and acidity to the filling.

The step that matters

Pack the filling and cover it tightly. Sugar, alcohol and tight covering limit spoilage, so the mixture must be packed firmly to exclude air and kept sealed. Loose packing or an open jar invites mould and fermentation.

Swap the currant

How well each one fits the dish's main ingredients (beef, apple, raisin, cinnamon, mace, clove, nutmeg):
