Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body, acidity and flavour of the soup.
Cornstarch
Thickens the soup as it heats, giving it body.
Milk
Adds creaminess and softens the tomato's sharp acidity.
Onion
Adds savoury aroma and background flavour to the soup.

The step that matters

Bring to a boil after adding the milk, stirring constantly. Milk contains sugars and proteins that scorch on the bottom of the pot, and cornstarch needs to reach a boil to fully thicken. Constant stirring prevents burning and lumps.

Swap the onion

How well each one fits the dish's main ingredients (tomato, milk, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits better
  4. Onionthe original

Fit is the average pairing score against tomato, milk, pepper. Candidates are from the same food group and used in at least 100 recipes.
