What each ingredient does

Rice
Its starch softens and thickens with liquid, forming the body of the pudding.
Milk
Provides moisture and creaminess as it sets with the eggs.
Egg yolks
Enrich the base and help it set into a custard when baked.
Egg whites
Beaten to stiff foam, they trap air to lighten the topping.
Sugar
Sweetens the topping and helps it brown in the oven.
Lemon juice
Adds acidity that brightens the sweetness of the pudding.

The step that matters

Beat the egg whites until stiff. Stiff whites trap air that gives the topping its lightness. Overbeaten whites turn dry and grainy and lose their ability to hold air, so the topping browns unevenly and becomes dense.

Swap the lemon

How well each one fits the dish's main ingredients (rice, milk, egg, butter, sugar):

  1. Vanillafits better

  3. Figfits about as well
  4. Lemonthe original

Fit is the average pairing score against rice, milk, egg, butter, sugar. Candidates are from the same food group and used in at least 100 recipes.
