Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Place sweetbreads in a pot with cold water, salt, and vinegar.

  2. Bring the pot to a boil, then remove the pot from heat.

  3. Transfer the sweetbreads to cold water until cool.

Bake

  1. Lard sweetbreads with lardoons.

  2. Layer pork trimmings in a baking dish, then place sweetbreads on top.

  3. Sprinkle chopped vegetables over them.

  4. Bake in a hot oven (400°F / 200°C) for 20 minutes.

Serve

  1. Fry the shaped bread slice in hot butter until golden.

  2. Place the crouton in the center of a hot platter.

  3. Arrange sweetbreads on top.

  4. Serve with peas or tomato sauce around.

What each ingredient does

Sweetbreads
Provide the tender, delicate meat that forms the main body of the dish.
Lardoons
Add fat that bastes the sweetbreads and keeps them moist as they bake.
Pork trimmings
Release fat and flavor into the dish as they cook under the sweetbreads.
Bread slice
Forms a golden fried base that soaks up juices and gives the dish a crisp contrast.
Butter
Browns in the pan to add nutty aroma and golden color to the bread.

The step that matters

Cooling the sweetbreads after boiling. Moving the sweetbreads into cold water stops residual cooking, so they firm up and keep a smooth, tender texture rather than turning tough and grainy.
