Veal Cutlets Braised

Ingredients

Directions

  1. Lard the veal cutlets on one side with pork fat.

  2. In a stewpan, place minced onions and carrots at the bottom.

  3. Lay the cutlets on top of the vegetables and cover with stock.

  4. Cook until the cutlets are thoroughly done.

  5. For a richer flavor, boil down the stock to glaze the cutlets or make a gravy with flour, roux, pepper, and salt.

  6. Strain the gravy before serving.

  7. Serve with tomato sauce, mashed potatoes, or vegetables like beans, peas, or cauliflower.
