What each ingredient does

Cucumber
Provides the crisp, fresh body of the salad once its water content is controlled.
Coarse sea salt
Draws water out of the cucumber slices through osmosis, firming them and seasoning the dish.

The step that matters

Wringing out the moisture. Salt pulls water out of the cucumber, so the slices must be squeezed dry after soaking. Leftover liquid would dilute the dressing and make the salad watery and limp.
