What each ingredient does

Small cucumbers
The main vegetable that becomes crisp and tangy once pickled.
Vinegar
Provides the acidity that preserves the cucumbers and gives them their sharp flavor.
Pulverized alum
Helps the cucumbers stay firm and crisp during pickling.

The step that matters

Soaking in boiling water with salt. Pouring boiling water over the cucumbers with salt for 12 hours draws out moisture and firms the flesh. Handling the scalding water carefully and timing the soak matters, because the texture of the finished pickles depends on it.
