Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the egg whites until very stiff.

  2. In a separate bowl, mix the flour, sugar, and cream of tartar.

  3. Add lemon flavoring to the dry mixture.

  4. Gently fold the dry mixture into the beaten egg whites.

  5. Pour the batter into an ungreased pan.

Bake

  1. Bake in a moderate oven at 350°F (175°C) for about 40 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a foam that traps air, giving the cake its light, airy structure.
Flour
Its proteins set during baking, forming the cake's structure around the trapped air.
Sugar
Sweetens the cake and keeps it tender and moist while it bakes.
Cream of tartar
Acidifies the whites, helping the foam stay stable and hold its volume.

The step that matters

Gently fold the dry mixture into the beaten egg whites. The batter's rise depends on the air bubbles in the whites. Vigorous stirring deflates the foam, so the cake bakes up dense and short instead of light.
