Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shad
Is the main protein, so it sets the base texture and flavor of the dish.
Cold vinegar
Adds acidity that sharpens the flavor and helps preserve the fish.

The step that matters

Boil for 20 minutes, then drain the shad. Boiling firms the flesh and sets the fish's structure, while draining removes the cooking liquid so the seasonings and vinegar cling to the fish rather than being diluted.

Swap the allspice

How well each one fits the dish's main ingredients (pepper, vinegar):

  1. Tarragonfits better
  2. Dillfits better
  3. Parsleyfits about as well
  4. Allspicethe original

Fit is the average pairing score against pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
