What each ingredient does

Sweet milk
Forms the liquid base that the meal thickens into a soft, creamy pudding.
Indian meal
Cornmeal whose starch swells and thickens the milk as it heats and bakes, giving the pudding body.
Sweet apple
Adds moisture and mild fruit flavor, and softens as the pudding bakes.
Molasses
Adds sweetness, deep color, and a rich, slightly bitter caramel flavor.

The step that matters

Adding the meal to the scalded milk. Cornmeal starch must be stirred into hot milk so it disperses evenly; added to cold or unstirred milk, it clumps. As the starch heats, it swells and thickens the liquid, so the pudding sets properly during the long bake.

Swap the apple

How well each one fits the dish's main ingredients (milk, molasses):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Applethe original

Fit is the average pairing score against milk, molasses. Candidates are from the same food group and used in at least 100 recipes.
