Turkey for Boiling

Ingredients

Directions

  1. Pick and draw the turkey, removing the leg bone close to the foot.

  2. Leave the crop skin long enough to turn over, then remove the crop, liver, gizzard, and gut.

  3. Wipe the inside clean and place a double cloth on the breast.

  4. Flatten the breast bone with a rolling pin.

  5. Rub a little black pepper, coarse sea salt, and minced parsley inside the turkey.

  6. Raise the thigh skin with your finger and tuck the legs under the apron.

  7. Stuff the turkey through the vent as you would for roasting.
