Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Scalloped Oysters

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Butter a neat pudding dish.

  3. Strain the oysters from their liquor and spread them on a cloth.

Assemble

  1. Add a drop of lemon juice to each oyster, then roll them in the rolled crackers, pepper, and salt.

  2. Layer the oysters in the dish until the bottom is covered.

  3. Dot bits of butter on top and add another layer of seasoned crumbs.

  4. Pour the oyster liquor over the top.

Bake

  1. Bake covered for 30 minutes or until the juices bubble at the edges.

  2. Uncover and bake until golden brown on top.

What each ingredient does

Oysters
Form the main body of the dish, becoming tender and rich as they cook in their juices.
Rolled crackers
Absorb the oyster liquor and form a crumb layer that sets and browns on top.
Butter
Adds richness and helps the top crumbs turn golden brown in the oven.
Oyster liquor
Supplies moisture and salty flavor, softening the crumbs as the dish bakes.
Lemon juice
Adds a bright acidity that balances the rich, briny flavor of the oysters.

The step that matters

Baking covered, then uncovered. Baking covered first lets the juices heat through and the crumbs soften without drying. Uncovering afterward allows the surface to brown; uncovering too early can leave the top pale or dry the dish.
