Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the potatoes

  1. Wash the sweet potatoes.

  2. Bake the sweet potatoes in their skins at 400°F (200°C) until soft.

  3. Remove the skins from the sweet potatoes.

  4. Slice the sweet potatoes.

Make the mixture

  1. Mash the sweet potatoes with butter, salt, and sugar.

  2. Scald the milk.

  3. Stir the scalded milk into the potato mixture.

  4. Pour the mixture into a greased baking dish.

  5. Sprinkle nutmeg on top of the mixture.

Bake and serve

  1. Bake the dish covered for 30 minutes.

  2. Uncover the dish and bake for an additional 15 minutes until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet potatoes
Provide the main body, starch and natural sweetness of the dish.
Butter
Adds fat for richness and a smooth, silky mouthfeel.
Milk
Adds moisture and a creamy texture to the mashed potatoes.
Sugar
Adds sweetness and helps the top turn golden in the oven.
Nutmeg
Adds a warm, aromatic flavour to the top layer.

The step that matters

Baking covered, then uncovered. Baking covered first traps steam so the dish heats through without drying out. Uncovering for the final 15 minutes lets surface moisture evaporate, so the top browns through the Maillard reaction and sugar caramelisation rather than staying pale.

Swap the sweet potato

How well each one fits the dish's main ingredients (butter, milk, sugar, nutmeg):

  1. Sweet potatothe original
  2. Potatofits about as well
  3. Capsicumfits less well
  4. Leekfits less well

Fit is the average pairing score against butter, milk, sugar, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
