What each ingredient does

Oatmeal
Forms the body of the gruel as its starches thicken into a smooth, porridge-like texture.

The step that matters

Stirring while the gruel boils. Oatmeal starch settles and scorches on the bottom of the pan when it is not stirred, which can cause lumps and a burnt taste. Constant stirring keeps the starch dispersed so it thickens evenly.
