Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells as it cooks, thickening the milk into a pudding texture.
Milk
Forms the liquid base that the tapioca swells in and sets into custard.
Egg yolks
Add richness and help thicken the pudding as it cooks.
Egg whites
Whipped into a stiff froth to form a light, airy topping.

The step that matters

Stir the tapioca into the boiling milk and keep stirring. Tapioca settles and can scorch on the bottom of the pot if left unattended. Constant stirring keeps it evenly suspended while the starch swells fully, giving a smooth pudding.
