Lemon Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. In a small pot, combine egg yolks, water, and corn starch.

  2. Place the pot in a larger pot of boiling water and cook until thickened.

  3. Prepare a puff pastry crust and line a pie plate with it.

  4. Bake the crust in a preheated oven at 400°F (200°C) until lightly browned.

  5. Pour the thickened mixture into the baked crust.

  6. Beat the egg whites until stiff, then mix in sugar to taste.

  7. Spread the meringue over the pie filling.
