Beef Steak Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the gravy

  1. Boil the chopped onions in 1 pint of water until tender.

  2. Mix the flour, butter, pepper, salt, and ketchup with the water from the onions.

  3. Add the beef to the mixture and boil for 3 minutes.

Assemble and bake

  1. Line a pie pan with pastry, pour in the meat and gravy.

  2. Cover with a top crust of pastry, making a slit at each end to let out steam.

  3. Bake at 400°F (200°C) until the crust is light brown and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef (in the method)
Provides the savory meat filling that gives the pie its main body and flavor.
Onions
Soften as they cook, adding sweetness and moisture to the gravy.
Flour
Thickens the cooking liquid into a gravy that holds the filling together.
Butter
Adds richness and fat that rounds out the gravy's flavor.
Pastry
Forms the crust that encloses the filling and browns in the oven.
Ketchup
Adds sweetness and acidity that deepen the savory gravy flavor.

The step that matters

Mixing the flour into the onion water. Flour clumps if added to hot liquid without being fully blended first. Mixing it smoothly into the liquid lets its starch dissolve and thicken evenly as it heats, giving a smooth gravy rather than lumps.

Swap the onion

How well each one fits the dish's main ingredients (flour, butter, pepper, ketchup):

  1. Capsicumfits better
  2. Shallotfits better
  3. Turnipfits better
  4. Onionthe original

Fit is the average pairing score against flour, butter, pepper, ketchup. Candidates are from the same food group and used in at least 100 recipes.
