What each ingredient does

Egg yolk
Thickens the milk and cream into a smooth custard as it heats.
Milk and cream
Provide the liquid and richness that form the creamy custard layer.
Mashed apples
Form the fruit base of the trifle and supply its main flavor.

The step that matters

Stirring the custard just below boiling. Egg yolk thickens as it heats, but if the mixture boils or overheats it can curdle and turn grainy. Constant stirring over low heat spreads the heat evenly and keeps the custard smooth.
