Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Boil or bake sweet potatoes until soft, then mash to make 2 cups of pulp.

  2. In a bowl, combine the sweet potato pulp, milk, sugar, salt, egg yolks, and lemon extract.

Bake and top

  1. Pour the mixture into a pie crust in a shallow pan.

  2. Bake at 350°F (175°C) until set.

  3. Beat the egg whites with a little powdered sugar until stiff peaks form.

  4. Spread the beaten egg whites on top of the pie and brown lightly in the oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet potatoes
Provide the main body and sweet, earthy flavor of the filling.
Milk
Adds moisture and liquid that helps the filling set smoothly.
Sugar
Sweetens the filling and helps balance the flavor.
Egg yolks
Set during baking to give the filling structure and a rich, smooth texture.
Egg whites
Whipped into stiff peaks to form a light topping that browns in the oven.

The step that matters

Beating the egg whites to stiff peaks. Egg whites only trap air and hold a stable foam when beaten fully and kept free of fat or yolk. Underbeaten whites will weep or collapse, and the topping will brown unevenly and lack lift.

Swap the sweet potato

How well each one fits the dish's main ingredients (milk, sugar, egg, lemon):

  1. Asparagusfits about as well
  2. Arrowrootfits about as well
  3. Sweet potatothe original
  4. Capsicumfits about as well

Fit is the average pairing score against milk, sugar, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
