Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter and sugar together.

  2. Add the egg yolks and mix well.

  3. In a separate bowl, beat the egg whites until stiff peaks form.

  4. Stir in the lemon zest, lemon juice, and sweet milk.

  5. Dissolve the baking soda and add it to the mixture.

  6. Gently fold in the beaten egg whites.

Bake

  1. Pour the batter into a greased baking pan.

  2. Bake at 350°F (175°C) until golden brown.

What each ingredient does

Eggs
Yolks enrich and bind the batter, while whipped whites add lift and an airy crumb.
Butter
Creaming with sugar traps air and adds fat for a tender texture.
Sugar
Sweetens the cake and helps hold air when creamed with butter.
Baking soda
Reacts with the acidity of the lemon juice to release gas and help the cake rise.
Lemon juice
Adds acidity that brightens the flavour and activates the baking soda.
Sweet milk
Adds moisture and liquid to hydrate the flour and form the batter.

The step that matters

Folding in the egg whites. Whipped whites hold air that gives the cake its lift. Stirring them vigorously knocks out that air, leaving a dense cake, so fold gently until no white streaks remain.
