Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. In a large bowl, beat the egg whites until stiff peaks form.

  2. Gradually add the powdered sugar, continuing to beat until well combined.

  3. Gently fold in the sifted flour and cream of tartar.

  4. Add lemon extract or bitter almond extract to taste.

  5. Pour the batter into an ungreased tube pan.

Bake

  1. Bake for 30-35 minutes or until golden and a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into stiff peaks, they trap air and give the cake its light, airy structure.
Powdered sugar
Sweetens the batter and, beaten in gradually, helps stabilise the whipped foam.
All-purpose flour
Provides the gentle structure that holds the cake's airy crumb once baked.
Cream of tartar
Stabilises the egg white foam, helping it hold its peaks during mixing and folding.

The step that matters

Folding in the flour and cream of tartar. Folding gently keeps the air trapped in the whipped egg whites. Stirring or deflating the foam makes the baked cake dense and short instead of light.
