Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a light, firm structure as it cools.
Egg whites
Whipped to stiff peaks, they trap air and give the pudding its snowy, airy texture.
Sugar
Sweetens the pudding and balances the sharpness of the lemon.
Lemon juice
Adds acidity and bright flavour that cuts through the sweetness.

The step that matters

Beating the egg whites into the gelatine mixture. Egg whites must reach stiff peaks before being folded in gradually. Under-whipped whites collapse and lose air, while adding them all at once can deflate the foam. Constant beating while the gelatine begins to set keeps the air evenly distributed.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
