Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the mold

  1. Brush the Savoy biscuits with the egg white.

  2. Line the bottom of a round mold with the biscuits, standing them upright around the edge.

  3. Place the mold in a 400°F (200°C) oven for 5 minutes to dry the egg.

Fill and chill

  1. Whip the cream to stiff peaks with the sugar, flavoring, and melted isinglass.

  2. Fill the mold with the whipped cream mixture.

  3. Cover the top with a piece of sponge cake shaped like the mold.

  4. Chill on ice until ready to serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Whips into a light, airy filling that gives the dessert its body and texture.
Isinglass
Gelatin-like setting agent that helps the whipped cream hold its shape when chilled.
Savoy biscuits
Form the crisp, structured shell that holds the cream filling upright around the mold.
Egg white
Glues the biscuits to the mold and helps them set as they dry in the oven.

The step that matters

Whipping the cream to stiff peaks. Cream under-whipped stays runny and will not hold its shape, while over-whipped cream turns grainy and can separate. Stiff peaks give the filling enough air and structure to stand up when chilled.
