Scalloped Oysters

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Carefully pick over the oysters to remove shells.

Layer and bake

  1. Put a few cracker crumbs in the bottom of a baking dish.

  2. Layer oysters on top, followed by a scant layer of crumbs.

  3. Dot generously with butter, then add pepper, salt, and a slight sprinkling of dry mustard.

  4. Repeat layers until all ingredients are used, finishing with a layer of crumbs on top.

  5. Pour enough cream over the layers to cover when pressed down.

  6. Bake at 400°F (200°C) and serve immediately.

What each ingredient does

Oysters
Form the main body of the dish and provide its briny, savoury flavour.
Cracker crumbs
Absorb liquid and add a light, crisp-edged texture between the oyster layers.
Butter
Adds richness and helps the top brown during baking.
Cream
Provides moisture that gently cooks and binds the layers as it bakes.

The step that matters

Pour enough cream over the layers to cover when pressed down.. Too little cream leaves the crumbs dry and the top may scorch before the oysters cook through. Pressing the layers down first shows how much liquid is needed to keep everything moist.
