Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine the chopped raisins, sugar, lemon juice, lemon rind, egg, and citron.

  3. Cut the pie crusts into small saucer-sized rounds.

Assemble and bake

  1. Wet the edges of the crusts, then fold them over the filling.

  2. Place the tarts on a baking sheet and bake until golden.

What each ingredient does

Raisins
Provide the sweet, chewy filling that forms the body of each tart.
Sugar
Sweetens the filling and helps it caramelize and brown during baking.
Egg
Binds the filling so it holds together when cut or served.
Lemon rind and juice
Add acidity and bright aroma that balance the sweetness of the raisins and sugar.
