What each ingredient does

Potatoes
Break down when boiled and mashed to give the soup its body and thickness.
Milk
Adds creaminess and a smooth, rich texture to the soup.
Butter or dripping
Carries flavour and adds richness when melted to cook the flour.
Flour
Thickens the soup as its starch swells when cooked in fat and liquid.

The step that matters

Boiling the flour mixture for 3 minutes. Flour must be cooked in the hot fat and liquid long enough for its starch to swell fully and lose its raw, pasty taste. Stirring it in smoothly before boiling prevents lumps.

Swap the onion
