Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Adds sweetness and keeps the frozen dessert softer by lowering its freezing point.
Bananas
Provide body, moisture and banana flavour, giving the sherbet its main texture.
Egg whites
Whipped and folded in, they trap air for a lighter, fluffier texture.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.
Oranges
Their juice adds citrus acidity and aroma alongside the lemon.

The step that matters

Fold in beaten egg whites. Fold gently so the air in the whipped whites is kept. Stirring hard deflates them, which makes the sherbet dense instead of light and fluffy.

Swap the banana

How well each one fits the dish's main ingredients (sugar, lemon, orange, egg):
