Potato Yeast

Why it works: Potato and ginger work together. They rank in the top 12% of all ingredient pairs, and cooks put them together in 992 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Potato Yeast

Ingredients

Directions

Prepare the potatoes

  1. Soak the potatoes in cold water, then pare them.

  2. Mix flour, sugar, and salt in a bowl.

  3. Grate the potatoes and add them to the flour mixture.

Make the starch mixture

  1. Pour boiling water over the mixture until it reaches the consistency of thin starch.

  2. If it doesn't thicken, cook it a bit longer.

  3. Strain and cool the mixture until lukewarm.

Ferment and store

  1. Add the yeast and place in a warm area until bubbles form on top.

  2. Beat well, cover tightly, and store in a cool place.

  3. Add ginger to improve flavor and preservation.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide starch and bulk that give the dough its body and moisture.
Flour
Thickens the mixture with starch, adding structure to the dough.
Sugar
Feeds the yeast and adds sweetness.
Yeast
Ferments the mixture, producing gas that makes it rise and bubble.

The step that matters

Cooling to lukewarm before adding yeast. Yeast is killed by high heat, so the mixture must cool to lukewarm before it is added. Adding yeast to a hot mixture can stop fermentation before bubbles form.

Swap the ginger

The recipe marks ginger as optional. How well each one fits the dish's main ingredients (potato, flour, sugar):

  1. Jalapenofits better
  2. Cinnamonfits better
  3. Nutmegfits better
  4. Gingerthe original

Fit is the average pairing score against potato, flour, sugar. Candidates are from the same food group and used in at least 100 recipes.
