What each ingredient does

Gelatine
Sets the cream so it holds its shape when chilled instead of staying liquid.
Peaches
Provide the main fruit flavour and the puree that forms the base of the cream.
Sugar
Sweetens the cream and balances the tartness of the fruit.
Cream
Adds richness and a light, soft texture to the set dessert.

The step that matters

Beating until it begins to thicken. Gelatine starts setting as it cools, so the mixture must be beaten at the right moment, once it thickens slightly but before it sets firm. Folding in the cream after that keeps the airy texture.

Swap the peach

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
