What each ingredient does

Cod
The main component; its flesh firms and turns flaky as the protein sets during cooking.

The step that matters

Cooking time. Fish proteins set and firm with heat, and the flesh becomes dry and tough if it stays in the water too long. Checking for doneness near the end of the cooking time helps prevent overcooking.
