What each ingredient does

Trout
Provides the main protein, which firms and turns opaque as it cooks.

The step that matters

Boil only until the eyes protrude. Fish proteins set quickly in hot liquid and turn dry and tough if boiled too long. Lifting gently matters because cooked flesh is fragile and flakes apart easily.
