Potato Border

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Pare, boil, and mash the potatoes until fine and light.

  2. Add the batter, salt, pepper, and 2 well-beaten eggs to the mashed potatoes.

  3. Grease a border mold and pack the potato mixture into it.

  4. Let it stand on the kitchen table for 10 minutes.

  5. Turn out onto a dish and brush with 1 well-beaten egg.

  6. Brown in the oven at 400°F (200°C).
