What each ingredient does

Cauliflowers
Forms the main body of the pickle and absorbs the vinegar brine as it cooks.
Vinegar
Provides the acidity that preserves and sharpens the pickled vegetables.
Coarse sea salt
Draws moisture out of the vegetables during the overnight soak, firming their texture.
Mustard
Adds sharp, pungent flavour to the pickling liquid.

The step that matters

Boiling the vegetables in the vinegar. Boiling for about 15 minutes until a fork pierces the cauliflower checks doneness. Undercooked cauliflower stays firm and crunchy, while overcooking makes it soft and mushy.
