Peach Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Line a pie tin with puff pastry.

  2. Fill with peaches and cover with sugar.

Bake and finish

  1. Add the upper crust and bake at 400°F (200°C) until done. Alternatively, bake without the upper crust until done.

  2. Remove from the oven and cover with meringue made from beaten egg whites and powdered sugar.

  3. Return to the oven and brown slightly.

What each ingredient does

Puff pastry
Forms a flaky, crisp base and upper crust for the pie.
Fresh peaches
Provide the fruit filling and its juices, which soften during baking.
Sugar
Sweetens the peaches and draws out their juices into the filling.
Egg whites
Whipped into meringue, they set into a light, airy topping.
Powdered sugar
Sweetens the meringue and dissolves easily into the whipped whites.

The step that matters

Browning the meringue. Meringue can turn tough or weep if overbaked, and it needs only a slight brown. Watch it closely on the final return to the oven, because sugar browns quickly once heated.

Swap the peach

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
