Why it works: Sugar and cream are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 43,450 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓
Apple Trifle
Ingredients
Directions
Make the apple base
Peel, core, and slice the apples thinly.
In a saucepan, combine the apples, 2 tablespoons of water, sugar, and minced lemon rind.
Boil until the apples are tender, then strain through a sieve.
If needed, add more sugar to the apple pulp and layer it at the bottom of a dish.
Make the custard and assemble
In a separate pot, stir together the milk, cream, eggs, and a little sugar over low heat until thickened, but do not boil.
Remove from heat and let cool slightly, then pour over the apple layer.
Whip cream with sugar and lemon peel, then pile it on top of the custard.
Garnish with apple jelly strips or slices of citron as desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Apples
- Provide the bulk and tart fruit flavour of the trifle's base layer.
- Eggs
- Thicken the milk and cream into a set custard when gently heated.
- Cream
- Adds richness and a smooth, silky texture to the custard and topping.
- Milk
- Forms the liquid base of the custard that the eggs thicken.
- Sugar
- Sweetens the apples and custard and softens the apple pulp as it cooks.
The step that matters
Heat the custard gently and do not boil. Egg proteins thicken the milk and cream at low heat, but boiling can curdle the eggs and leave the custard grainy and thin.
