What each ingredient does

Cream
Forms the whipped topping and the pink sweetened base, giving a light, rich texture.
Loaf sugar
Sweetens the cream so it tastes sweet and balances the lemon juice.
Lemon juice
Adds acidity that brightens the sweet cream and helps the whipped cream hold its shape.
Sponge cake or lady cake
Provides a soft, absorbent base layer that holds the jam and sits under the cream.
Raspberry jam or marmalade
Adds fruity sweetness and moisture to the cake layer, and flavor contrast to the cream.

The step that matters

Beat the lemon cream until stiff. Cream must be beaten just until it holds stiff peaks. Over-beating turns it grainy and can cause it to separate, while under-beating leaves it too loose to mound over the cake.

Swap the currant

How well each one fits the dish's main ingredients (cream, sugar, almond, raspberry, lemon):

  1. Vanillafits better
  2. Blackberryfits better
  3. Peachfits better
  4. Currantthe original

Fit is the average pairing score against cream, sugar, almond, raspberry, lemon. Candidates are from the same food group and used in at least 100 recipes.
