Why it works: Clove and nutmeg match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 8,686 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Rich puff pastry
- Forms the flaky, layered shell that holds the filling.
- Large fresh oysters
- Provide the main filling and briny flavour.
- Hard-boiled egg
- Adds body and richness to the filling as it is grated in.
- Butter
- Adds fat, richness and a smooth mouthfeel to the filling.
- Oyster liquid
- Moistens the mixture and carries the oyster flavour through the stew.
The step that matters
Let the filling cool completely before assembling. Placing warm oysters in the pastry can soften the flaky shells and make them soggy, so the filling should be fully cold first.
Swap the mace
How well each one fits the dish's main ingredients (oyster, clove, nutmeg, egg, butter):
- Cinnamonfits better
- Allspicefits better
- Parsleyfits better
- Macethe original
Fit is the average pairing score against oyster, clove, nutmeg, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
