What each ingredient does

Soft-shell clams
Provide the main body of the dish, cooked gently in steam and their own liquor.
Butter
Adds richness and a smooth, silky mouthfeel to the clam broth.
Coarse sea salt
Seasons the clams and their cooking liquor, bringing out their natural savoriness.

The step that matters

Setting the pot over a brisk fire for 45 minutes. Boiling too hard or too long toughens clam flesh, so the clams can turn rubbery; they need steady, controlled heat until the shells open.
