Creamed Eggs

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Boil the eggs for 20 minutes.

  2. Prepare 1 pint of cream sauce.

Assemble and bake

  1. Place the toast on a hot dish and add a layer of sauce on each slice.

  2. Cut the egg whites into thin strips and place on the sauce.

  3. Rub some of the yolks through a sieve onto the toast.

  4. Repeat the layering process and finish with a third layer of sauce.

  5. Place in the oven at 400°F (200°C) for about 3 minutes.

  6. Garnish with parsley and serve.
