Rich Baked Apple Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the apple pulp

  1. Peel, core, and cut apples for sauce.

  2. Place apples in a saucepan with just enough water to prevent burning and stew until reduced to pulp.

  3. Weigh the pulp and, for every ½ pound, add sifted sugar, grated lemon zest, and 6 beaten eggs.

Make the filling

  1. Mix these ingredients well. Melt butter and stir into mixture.

Bake

  1. Place a border of puff pastry around a baking dish, pour in mixture, and bake at 350°F (175°C) for about 30 minutes.

What each ingredient does

Apple pulp
Provides the bulk and moist, fruity base of the pudding.
Loaf sugar
Adds sweetness and helps balance the tart apple.
Butter
Adds richness and fat for a tender, smooth texture.
Eggs
Set during baking to give the pudding its structure.
Puff pastry
Forms a crisp, flaky border around the soft filling.

The step that matters

Bake the pudding until it is set. Eggs set as they heat, so the pudding needs enough oven time to firm up. Underbaking leaves it runny, while overbaking can make the eggs curdle and turn grainy.

Swap the apple

How well each one fits the dish's main ingredients (sugar, butter, lemon, egg):
