Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hops
Add bitterness and help slow spoilage in the starter.
Potatoes
Supply starch that the yeast can feed on, adding body to the starter.
Brown sugar
Feeds the yeast and adds sweetness and molasses flavor.
Flour
Provides starch for the yeast to ferment and thickens the mixture.

The step that matters

Keep it near a warm place. Yeast activity depends on warmth, so a cool spot slows fermentation and a warm spot speeds it up. Stirring frequently helps distribute the yeast and sugars evenly while it works.

Swap the potato

How well each one fits the dish's main ingredients (hops, sugar, flour):

  1. Mustardfits better
  2. Arrowrootfits better
  3. Parsnipfits better
  4. Potatothe original

Fit is the average pairing score against hops, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
