Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together.

  3. Add the egg whites, beaten very stiff, and mix well.

  4. Sift together the corn starch and flour, then add to the mixture.

  5. Pour the batter into cake pans, about an inch thick.

  6. Bake until golden brown.

  7. For icing, beat the egg whites until very light.

  8. In a saucepan, pour ½ pint boiling water over the sugar and boil until clear.

  9. Pour the boiling syrup over the beaten egg whites and beat until cold.

  10. Add the citric acid and vanilla extract, then spread between the cakes.
