The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

What each ingredient does

Strawberries
Provide the main flavor and fruit body of the jelly.
Sugar
Adds sweetness and helps give the jelly its body.
Clarified isinglass
Gelling agent that sets the liquid into a firm jelly when chilled.
Lemon juice
Adds acidity that brightens the strawberry flavor.
Clear syrup
Carries the strawberry flavor and keeps the jelly moist and sweet.

The step that matters

Pour into the mold placed in ice. The jelly must cool quickly and evenly to set firm and clear. Gelling agents such as isinglass form a network as they chill, so a warm or slow set can leave it soft or cloudy.

Swap the lemon

How well each one fits the dish's main ingredients (syrup, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Pearfits about as well
  4. Lemonthe original

Fit is the average pairing score against syrup, sugar. Candidates are from the same food group and used in at least 100 recipes.
