Caviare Medallions

Ingredients

Directions

  1. Cut cold boiled potatoes into 1-inch thick slices.

  2. Stamp out rounds the size of a silver dollar and marinate in oil and vinegar.

  3. Wipe oil from anchovies and divide each into 3 strips.

  4. Set the strips on the edge of the potato rounds.

  5. Fill the center with chopped pickled beetroot.

  6. Top with ½ teaspoon of caviare.

  7. Finish with a tiny figure cut from cooked egg white.

  8. Arrange these in a circle on a serving dish.

  9. Make additional medallions using rounds of beetroot as the base and chopped egg white instead of beetroot.

  10. Finish these the same way as the first medallions.

  11. Create more medallions with beet or potato as the base and sifted cooked egg yolk in the center.

  12. Garnish the plate with stuffed olives and parsley.

  13. Serve as the first course at luncheon or a chafing-dish supper.
