Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy bulk that holds the mixture together and gives a soft interior.
Codfish
Supplies the main flavor and savory body of the balls.
Butter
Adds fat for richness and a tender, moist texture.
Eggs
Bind the mixture and, when whipped, help make the balls light.

The step that matters

Drying the mashed mixture on the stove. Any leftover water makes the mixture loose, so the balls can break apart or spatter when dropped into hot lard. Drying the potatoes and fish well lets the starch and protein set firmly once fried.
