Scalloped Oysters

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Cover the bottom of a baking dish with cracker crumbs.

  3. Add a layer of oysters, then sprinkle with coarse sea salt, black pepper, and bits of butter.

  4. Repeat layering with cracker crumbs and oysters until the dish is full.

  5. Ensure the top layer is a thick layer of cracker crumbs.

  6. In a bowl, mix the oyster liquor, milk, and beaten egg, then pour over the layers.

  7. Bake until the oysters are well done.
