Quail Baked in Sweet Potatoes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Peel and hollow out the sweet potatoes.

  2. Season and butter the quail thoroughly on the outside.

  3. Place the quail inside the sweet potatoes and tie them with twine.

Bake and serve

  1. Bake in a covered pan at 350°F (175°C) for 1½ hours, adding enough water to the bottom of the pan to prevent sticking.

  2. Place the sweet potatoes flat to keep the quail's juices inside.

  3. When ready to serve, replace the twine with toothpicks.

What each ingredient does

Sweet potatoes
Form the edible vessel that holds the quail and absorbs its juices as it bakes.
Quail
Provides the main meat, which cooks gently inside the potato as it bakes.
Butter
Adds fat and richness to the outside of the quail, helping it brown and stay moist.

The step that matters

Adding water to the pan. Enough water on the bottom of the pan keeps the sweet potatoes from scorching or sticking during the long covered bake, and the steam helps cook the quail gently.
