Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Forms the bulk of the croquette and gives a soft, tender interior.
Eggs
Egg yolks bind the mixture, while egg whites form a coating that helps it brown.
Pecans or walnuts
Add crunch and nutty flavor to the soft potato mixture.

The step that matters

Frying in hot fat. If the fat is not hot enough, the croquettes absorb oil and turn greasy before the coating sets and browns. Hot fat seals the coating quickly, keeping the inside moist and the outside crisp.

Swap the pecans

How well each one fits the dish's main ingredients (potato, egg, onion, parsley, pepper, nutmeg):

  1. Chickpeafits better
  2. Beansfits better
  3. Lentilsfits better
  4. Pecansthe original

Fit is the average pairing score against potato, egg, onion, parsley, pepper, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
