Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Cream the butter and powdered sugar until frothy.

  2. Beat the eggs separately, then beat the egg whites until very stiff.

  3. Fold the stiff egg whites into the butter mixture last.

Bake

  1. Pour the batter into a prepared pan.

  2. Bake at 350°F (175°C) for 1 hour without opening the oven door.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air, giving the cake its rich, tender crumb.
Eggs
Egg whites whipped to stiff peaks lighten the batter and help the cake rise and set.
Flour
Forms the cake's structure as the batter sets in the oven.
Powdered sugar
Sweetens the cake and helps the creamed butter hold air when beaten.

The step that matters

Fold the stiff egg whites into the butter mixture last. Stiff whites hold the air that lifts the cake. Overmixing or deflating them during folding makes the crumb dense, so fold gently and only until just combined.
