Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Combine the cold mashed potatoes and melted butter in a bowl.

  2. Beat the mixture until very light.

Shape and bake

  1. Add salt to taste and the well-beaten eggs, then mix well.

  2. Press the mixture through a colander into a buttered baking dish.

  3. Bake in a 400°F (200°C) oven until brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Provide the bulk and starch that give the puffs their soft, light body.
Eggs
Bind the mixture and help it set and puff as it bakes.
Butter
Adds richness and moisture, and helps the surface brown in the oven.

The step that matters

Beating until very light. Beating incorporates air into the potato mixture, which helps the puffs rise and stay light rather than dense. Under-beating leaves the texture heavy.

Swap the potato

How well each one fits the dish's main ingredients (butter, egg):

  1. Asparagusfits better
  2. Chivefits better
  3. Leekfits about as well
  4. Potatothe original

Fit is the average pairing score against butter, egg. Candidates are from the same food group and used in at least 100 recipes.
